Head Cheese is not a dairy cheese but an organ sausage that typically uses various parts of the head. US Wellness Meats recipe uses Beef Tongue and Beef Heart. A delicious way to get your nutritious liver and organ meat. Good cold but I really prefer this sliced and warmed in the air-fryer. Takes on an almost sausage like flavor. So good!
